Uninstall Office on Mac without deleting Outlook mail
Quit Word, Excel, PowerPoint, Outlook, and the other Office apps before you move them to the Trash. Microsoft’s uninstall then asks you to remove per-app containers and three shared group folders. Those three hold Outlook data, so copy them out and open the copy before they go to the Trash.

What Mole lists
Mole does not add a rule that sweeps ~/Library/Group Containers because one Office app was removed, and it does not list a shared Microsoft parent such as ~/Library/Application Support/Microsoft as this suite’s leftover. Removing the apps does not cancel a Microsoft 365 subscription.
